The assumption that z=0.9d, is that a eurocode recommendation, or just something we do for this particular problem? That is, are the simplified equations which assume z=0.9d derived in this lecture generally applicable within eurocode design, or should I reevaluate those for each new beam?

When dealing with shear and in particular the Strut Inclination Method, we can take z=0.9d in all cases (for beams), since this represents the distance between the top and bottom chords of the analogous truss (not to be confused with the lever arm we calculate when evaluating flexural capacity of a section).

EC2 does indeed reference this value of z=0.9d.
